Over three dynamic hours, you’ll cook, plate, and indulge in a vibrant menu bursting with fresh, seasonal ingredients and innovative techniques. Guided by Chef Kevin’s expert instruction, you’ll explore new ways to level up your vegetarian cooking game. This isn’t just another demo class – you’ll roll the dough, chop the veggies, and plate like a pro.

  • Quinoa Salad with Cranberries & Pistachios: Learn how to cook grains perfectly and transform them into a refreshing and flavorful salad you’ll make again and again.
  • Butternut Squash, Spinach & Goat Cheese Galette: Master the art of crafting galette dough from scratch, forming a gorgeous crust, and creating a filling that wins hearts and taste buds.
  • Cannellini Bean Tartine with Artichoke Hearts, Feta & Arugula: Dive into creating a show-stopping open-faced sandwich that combines bold flavors with elegant presentation.
  • Wild Mushroom & Parsnip Ragout over Creamy Polenta: Sauté, simmer, and serve up an earthy, rich vegetable ragout perfectly balanced with creamy, cheesy polenta.

  • Making bean salad, topping and plating it as a petit open-faced sandwich (Tartine)
  • Making and rolling galette dough, making filling and forming a galette

Chef Kevin Appleton has a passion for food, drink, and fun. He is a former Culinary Instructor at Madison College. He worked at some of the best fine dining restaurants in Chicago and was Executive Chef at Robert Morris College’s Institute of Culinary Arts.
