First, you’ll master the technique of preparing Angel Hair Pasta with Summer Fresh Tomato Basil Sauce and Fresh Mozzarella. This dish takes full advantage of the vibrant flavors of summer, using only the freshest cherry and heirloom tomatoes marinated with garlic, basil, and Parmesan cheese. Inspired by a classic Lidia Bastianich recipe, this pasta showcases the simplicity and beauty of uncooked, marinated ingredients.
Next, you’ll create Cheese Sachetti, delicate ricotta-filled pasta purses, paired with a decadent Truffle Cream Sauce and a Balsamic Fig Glaze. For those who prefer a different flavor profile, we also offer the option of a delicious herb cream sauce. Chef Kevin Appleton has a passion for food, drink, and fun. He is a former Culinary Instructor at Madison College. He worked at some of the best fine dining restaurants in Chicago and was Executive Chef at Robert Morris College’s Institute of Culinary Arts.
